So I went to her website where she has a lot of recipes and she has this fudgy brownie recipe on her website.
And I noticed she published it after the book came out.
And basically in the head note, she said that she has updated her recipe recently.
Oh wow.
And she went through her meticulous process of making it even better than her previous version, which was very, very good.
And then I mean looking at the picture and it has an incredible
shattery top that you get from box mix usually.
And she explains the science of how you get it.
And it's different from her book recipe.
So she explains that if you don't dissolve the sugar enough in the early stages of making your brownies, it will turn into a grainier brownie and you won't get that glossy top.
The key to the glossy top is dissolving the sugar.

In the book version.
You take sugar and melted butter, you whisk them together and you add a couple eggs, room temperature eggs, and an egg yolk.
