The reason I bring it up is not to give Jonathan a hard time because you and I both really support that people have their preferences and that's okay.

And we're not judging anybody.

But I say that because I

I really assumed every person who can eat dairy on the planet would love stuffed shells.

And I have learned that it's not just Jonathan.

There's many other people and their biggest complaint is they don't like too much ricotta.

And I understand that, like that ricotta as a texture and flavor isn't always everyone's favorite.

So if that's not your thing, then this is not your dish.

My last caveat is though, if you can find good ricotta and full fat ricotta in particular,

It makes a big difference in stuffed shells.
