It's making something as long as you don't worry about the fact that it's not actually really kind of cheese, then it melts beautifully.
I'll tell you what, there's a there's a there's a terrible sort of trade secret about this stuff.
One of the things they add to it to make it runny is a product called sodium citrate.
And it's an acidity adjuster, so you stir it into the cheese as it's melting.
Uh uh as w as you're casting it into those squares.
And it makes it makes it runnier and and stringier and it's lovely.
You can buy this stuff in the chemist
Where it's sold as a cure for cystitis.
Okay.
I know this is so weird.
So you put a tiny quantity of this into melted cheese and it makes burger cheese.
Bonkers.
I s I'll I'll tell you what though w one thing you can do is is if you are doing a sort of a thick burger
what you'll find is a lot of it is leaks a lot of the juice out.
