Like you were working in basement kitchen.
It was a real great vibe to food.
Food was beginning to kick on.
Yeah.
Yeah, a lot.
But a lot of late nights, a lot of early mornings, a lot of like rock and roll behaviour, a lot of music.
Like everything about London in mid-90s was just absolutely buzzing.
And being a chef and working in it then was just, yeah, it was amazing.
It was a brilliant time.
