Cherry is really good for pork.
I cook a ton of pork, especially here in Kansas City.
Pork is cheap a lot of times.
Like I can get a full slab of St.
Louis style cut, actually a full side of spare ribs for like under 20 bucks.
And that's the full slab, the skirt meat.
And I cook all of it.
And yeah, put some nice cherry and some maple or hickory.
Phenomenal.
Cook it.
Throw some nice barbecue sauce and a nice molasses sauce.
Phenomenal.
So when I do my ribs, I do it where of course, cook them meat side up, cook them.
When you wrap them at the one 65, I look, I did the competition method, a little bit of brown sugar, some butter, a little bit more rub and some honey.
And then you put meat side down.
You let it sit in that, basically in that bath, get my two Oh five.
I pull it out of that.
I,
glaze my ribs with whatever sauce, and I let that sauce tack up for about five minutes.
It's the perfect rib, I think.
