When I do my chicken wings, I don't sauce them.
I let the people choose their sauce.
I fry them.
I flash fry them for about five, six minutes, and then I let you choose your sauce.
I dump them in the bucket, put the sauce on, and then I toss them.
I don't douse them all with one.
Same thing with my pulled pork.
If I do anything, I do a little bit of the juices.
I
put the juice in it.
And then I put a little bit more of the rub in there just to get that little bit of caramelization of the rub.
That's it.
And I let people put whatever sauce they want on pulled pork is right.
It takes up the texture of the meat and the flavor of the meat when you douse it in the sauce.
I love it on the sandwich.
Some good sweet and spicy pickles.
Phenomenal.
Put pulled pork on a hamburger or in mac and cheese.
I made something a couple of weeks ago.
I'll be making them again.
