Chef and Instagrammer Alanna Sheehan, good afternoon.
Alannah Sheehan 0:02
Hi, Brendan, how are you?
Brendan O'Connor 0:04
I'm good, thanks. So, Alanna, porridge on the menu today. You say porridge is a hero food.

What makes porridge a hero food?

Brendan O'Connor 0:09
Why?
Alannah Sheehan 0:10
100%. I mean, it's affordable. It has a long shelf life. It's accessible. And all you have to do is add as little as water. It is so versatile. Like, you can make so many different things from it. Bread, a cake it can have like a cake like consistency overnight oats the possibilities are just endless okay and you say water if you're making just porridge porridge straight porridge milk or water i personally am a milk person i think come on yeah we've come a long way just put a little milk in give yourself some pleasure in life and come here is there okay to do in the microwave I would say, yeah, absolutely. I mean, you know, mornings are busy and the important thing is to get out the door and get something in your belly.
Alannah Sheehan 0:58
So if needs must, make it whatever way you need to make it, I think.
Brendan O'Connor 1:03
Yeah, OK. Now, people like to then dicky up what I would call the misery of porridge with various toppings. What are some nice toppings that would make the porridge more palatable?
Alannah Sheehan 1:12
OK, so I would say for what you want there, I would say like maybe... Some nice jam, chocolate, chopped nuts, maybe some mango, peanut butter.
Brendan O'Connor 1:23
Oh, yeah. OK. Yeah. Yeah. I'm with you.
Alannah Sheehan 1:27
Even you can change the liquids as well. So if you want something really luxurious as a real treat, even add chocolate milk instead of your normal milk.
Brendan O'Connor 1:36
Oh, my God. OK, so it's practically like one of those crazy cereals. I like it. OK, so listen, overnight oats are a huge thing now the last few years. You have an overnight oats recipe for us. So tell us about making overnight oats through the medium of gingerbread overnight oats.
Alannah Sheehan 1:55
Well, I think they're first of all, they're fantastic because, again, they're low cost. You can prepare them ahead. And you can make them look as pretty or as normal as you want. So it would be a nice idea for a breakfast for many. But so you basically soak your oats in yogurt and milk. And then for the gingerbread ones that I have here, I have them flavored with vanilla, cinnamon. The raisins are soaked as well. Lots of ginger. And what else do we have in there? A little bit of nutmeg as well. And then just to top it all off, I've got granola on top and then you've got the option of serving it with some stewed apple, which is great for immunity and your gut.
Brendan O'Connor 2:34
Okay.
Alannah Sheehan 2:34
So it's a really good rounded breakfast.
Brendan O'Connor 2:36
Yeah, that's good. We'll put that with all your recipes up on rt.ie forward slash Brendan. You mentioned the bread you can make earlier. You have a really easy porridge bread you make.
Alannah Sheehan 2:50
Yeah, this is really, really easy. And I kind of forgot about it for a while, but it's so convenient because um it tastes lovely and a really really good one to get children involved um so it's just three ingredients it's porridge oats um natural yogurt or greek yogurt and some bicarbonate of soda and that's it okay so simple definitely check it out okay then for people who can't stand porridge granola can be a little bit more exciting do you make your own granola i do and now i make a very healthy one and then i make one that's A little bit more, say, luxurious for my children.
Brendan O'Connor 3:26
OK, talk me through it.
Alannah Sheehan 3:29
So basically, I think for my one that I make myself, which is healthier, the recipe will be there as well. I flavour it with sugars that are as close to nature as possible. So like maple syrup. Then I use a little bit of olive oil. I use lots of spices and coconut and raisins then just to add more texture.

What toppings can enhance the flavor of porridge?

Alannah Sheehan 3:49
And of course, oats as well.
Brendan O'Connor 3:50
Okay, that sounds great. Tell me about the nice one.
Alannah Sheehan 3:55
Okay, so then the nice one is made with, it has all the, basically the other same ingredients.
Brendan O'Connor 4:01
Okay, you need those basics in your granola, right?
Alannah Sheehan 4:04
Yeah, the basics. So I have oats, I have hazelnuts because they trick my children into thinking they're having Nutella.
Brendan O'Connor 4:09
Yeah, I like that.
Alannah Sheehan 4:10
Then I have chocolate chips, real butter. Like if you're going to use butter, get real butter. Okay. And then I have, what else do I have in there?
