It's just a just you see, just raw beetroot that I just cut into weed uh stick so you can grate it. Try a wee bit, but it's just uh you know what I love about beetroot? You know, we buy beetroot in the middle of the winter and it's like purple, deep purple. Then you buy it this time of year and it's just a completely different ball game but it's lovely.

So I'm gonna do a yogurt dressing. So in here I've got the the yogurt and then what I want to do is just uh We pan on and what I'll do is toast we black onion seeds.

Yeah, just a little bit. So you put the skillet inside the in the barbecue to heat it up.

Yeah. And that hopefully I'll they're just nice. And then elder flowers. So we just take the flowers off. Yeah, how about we how about we smell it for that? Just rub that in. And they're sort of there. You need them? Uhhuh. Oh yeah, we're gonna eat it in the yogurt. Just don't don't um use the stems, you know, take it off. Mm-hmm. And I gave those a wee wash just in cold water and then patted them dry. Elderflowers are they're they're still in season at the moment but they're coming to an end. So now is your time to either use some or Make a wee bit of cordial or so that's about a thousand. Really beautiful. Yeah, aren't they? And then just chop those up nice and fine. And then fire that entire yogurt.

Master at work. I know you have always said this, but every time I get down to that last wee bit of onion it gets a bit slidey and wet. And then that's when you that's when you can lose a finger without thinking about it on it. Quite balsamic.
