So to fry your chicken in butter just seems like a wild idea unless it's clarified.

So I mean, that was a disaster.

But to this day, I've had dinner parties where I'll serve salmon and be like, here you go.

I just roasted this in the oven, roasted salmon, and everyone will cut into it and it'll be like completely raw on the inside.

And it's like, okay, let's put it back in the oven.

But the difference is I don't freak out as much anymore.

And also you can ruin somebody's experience of what they're about to eat by just changing the narrative around it.

It could be the same exact food, but if you say, oh, this didn't come out as good as it normally comes out, like usually it tastes much better than this.

It's like just hearing those words will make the food taste different than if you had never said that.

So you have to be careful what you say.

Melissa Clark is just the greatest.

And I'm lucky enough to have met her in New York.

So I feel starstruck just seeing her.

And we had dinner not too long ago, which was amazing.

But her recipes are...

And they're just so in like my wheelhouse.

There's anchovies, there's garlic.

I mean, there is not a recipe of hers that I've ever seen where I would not want to eat that thing immediately.
