what we're trying to do at cielo is to really be seasonal focused sure right very seasonal ingredients so right now it's like the peak of orange and citrus right now so yeah it just it gives it such a special pop uh i didn't even try it on the uh fresh made uh focaccia bread but uh
So this is definitely one, the ricotta.
I'm really excited about this.
I have some other stuff I'm working on that I'm putting up in the next couple of weeks that we're working on.
I really want to focus on the seafood, which sounds strange for a steakhouse.
It's delicious.
It's sweet.
It's meaty.
Anything like that, I just love.
So what's your favorite preparation for scallops?
I have a couple.
What I'm working on right now is a corn chowder.
Because corn's going to start coming into season.
And to me, when I think of steakhouse and scallops, I think of bacon.
