And then there were a few other owners.
But as a chef, you don't really know the back of house.
But like, yeah, my sous chef when I started was a guy called Daniel Fraser, who now runs the Lindus Group.
worked with him on and off through the years one of my good mates in hospo we were together at euro um euro was a different beast like it was different hospital times as well the numbers you do the behavior like there's times you park in that downtown car park and you leave nine days later you know and pay the lost ticket because it's cheaper you finish work you go out you start working and it just starts rolling and
somehow you get away with no sleep aided by uh things you know what i mean but that was hospitality back then that's how it went but honestly you had to be in that crowd the ones that were going home they weren't
at the party, so to speak, literally and figuratively, you know, so you had to do that shit to get ahead in hospital back then.
And the reality is, you look around now, and you don't tell the tall tales, but a lot of the big dogs and a lot of places that you know, we know them from 4am 5am, starting to re up for the start of work, you know.
Every time now as an adult that I react to something in a way that I wouldn't have when I was a shithead, I think, yeah, that's for you, mum.
I mean, you don't, but people go, I don't know.
I've never got off over losing my mum and I never ever will.
And I'm not saying like I'm running around sad all the time.
But the reality is if you said to me now, oh, would you like to have your best mate back?
