That's too much soda or otherwise it has streaks in it.

So it means it's not being mixed in through it properly.

A lot of people put far too much soda in bread.

There are a couple of different kinds of sponges.

But basically, they often whisk up the sugar and the eggs together, get lovely and fluffy, and then add in the flour and whisk that in again.

Now, if you do that, it'll be as dense and heavy as anything...

You need to stop at that stage and fold in sieved flour very gently into it so you don't knock out the air out of it.

And that really helps.

But this is a lovely, this recipe I'm going to send you is Mrs. Lamb's sponge, it sounds like.

Now, many years ago, when she was a young married woman, it was during the war, she was desperate to make a lovely, squishy, light sponge like all her neighbours.

And they all seemed to be heavy.

So anyway, and she was worried about, you know, wasting eggs during the war.
