So the stock should be hot and then your pan should be hot.

So a ladle every time.

And then the rice absorbs that ladle each time.

And that's important.

It is a dish that you stand over.

So what I would do is that...

Plain rice, let's just say, with stock, maybe a bit of white wine and salt and pepper.

And there's usually always Parmesan cheese in my risotto, is the base.

And then your filling can be so seasonal, can be anything.

So let's say this time it's roast courgette, peas and spinach.

I'll roast the courgette while I'm making that bit.

I'll take it out.

I'll take half of that into a Nutribullet or a blender of some kind.

with a little bit of cream, peas and spinach.

And that'll go like pungent green because those peas are even straight from the freezer will work.

And the spinach is fresh.

I'll pour that through the risotto once it's finished.

And then those courgettes can get dotted through.

So you've got kind of texture and you've got this bright green.

If that's October, November, I'll do that with pumpkin.
