I still remember the first time I tasted hoisin was in a restaurant in Miami, South Beach, Miami, back in 2004.

And I had this like hoisin chicken noodles.

I was like... Mind-blowing.

It blew me mind, man.

But we had anybody that had a duck confit, I had it.

Anybody worth knowing.

And Johnny Cook in Dublin had the greatest duck confit of all time.

The best bread was a little restaurant in Galway that was very short-lived.

Somebody from the roost.

It was a place called The Archway.

There was a French guy that had opened it briefly.

Just made breads as well.

And another one was creme brulee.

If it was on a menu, we had it and we tried it and we judged every restaurant.

And you'd be amazed how many of them back in the 90s had the likes of that on, you know.
