I don't know how it came up or what came up.
I'm doing Mexican themed food on the rooftop.
So I just thought about chicken quesadilla.
It's a wee dish you used to do in Boston.
I've thrown it on in the Palmer as well a couple of years ago.
I might bring it back actually this year.
And it's a chicken quesadilla.
alright, and I also do it with grilled veggies, so you can do a grilled veggie option, or you can mix it up, with the grilled veggies, you're just talking, fire roasting, some bell peppers, red, green, yellow peppers, get an aubergine, top and tail it, courgettes, top and tailed, and then slice them on a mandolin, so long strips, mix all your veg up,
with a little bit of crushed garlic, salt, white pepper, a little bit of lime juice, lemon juice, and then onto sheet pans, 200 degree oven for about seven or eight minutes just to sort of char it and cook it.
Take it out, let it cool down and set it aside, all right?
The chicken then, you just basically got some cooked chicken breast.
So just like add in a little bit of like Mexican spices, like paprika, smoked paprika, salt, pepper, what have you, a tiny little bit of cumin put on there.
Onion powder works.
Onion powder, celery salt, and onion powder.
Garlic powder or whatever.
So just basically baste your chicken.
I hate the mix nearly.
Almost, yeah, same idea because nearly everybody has a wee jar of that sort of stuff, even a little jar of Cajun mix if it's sitting in there.
Yeah, yeah.
Sprinkle it all on, get it all over the chicken breast and bake them, cook it, cooled, set aside.
