And then you start finding that these plant-based meals really start punching through, delighting the palate, and they don't seem like the poor relative of the plate that's got a big piece of meat or fish on it.
As ever, it's so much about balance.
And it is fair to say that my balance has shifted.
And I eat less meat, probably not much less fish, because I live by the sea and I've got an opportunity to get very fresh, sustainably caught fish.
But I'm just more comfortable than I've ever been about putting plants-only food on the table more than half the week.
Let me put it like that.
I mean, we've raised chickens.
We've had goats and sheep at home, occasionally beef.
And so I usually have a freezer full of home-reared meat.
But it doesn't come out every day.
It comes out once or twice a week.
And then it has at least two or three outings.
And if I've taken something out at the weekend, that's probably it for, that might be it for 10 days, because there's lots of things to enjoy with the leftovers.
If you want any behavior change from anyone, anywhere, about anything,
You've got to promise that life is not going to get worse, that actually it's going to get better.
So people believe you say it's going to get better because you're going to feel better.
They can probably buy into that.
But does that mean it has to taste worse?
Because if that's the route, I'm not sure I'm up for it.
It absolutely doesn't have to mean that.
