You thought chia seeds would be at the top of the list.
I'll give it a shot.
Peas, carrots, sweet corn, mushrooms, broccoli, cabbage, tomatoes, beans, lentils.
How many have I said so far?
There's a couple more.
The point being basically that they're ingredients everybody knows already.
They know what they look like.
You know where to get them.
You've probably got some of them in your fridge or your cupboard already.
they are basically the most accessible, most inexpensive vegetables.
I don't mind if they're tinned or frozen.
Some of them you're obviously going to be more inclined to buy fresh.
But you know what they are, but you're still probably thinking of them as the virtuous side veg.
So the aim of the book is to sing about them as the heroes that they are or can be in your kitchen.
And the way to do that, as we've hinted at, is to put them center stage and make them the star of the dishes.
So each vegetable has a chapter.
And in that chapter, it has...
eight or nine recipes.
And I can promise you in each one, you'll get a couple of salads, a couple of big hearty soups, a couple of stovetop main courses, and a couple of things you can slam in the oven.
So sort of tray roasts.
