I think most Americans are dealing with leaky gut and that.
Well, and also in Europe, though, we have all these quick yeast rise, you know, things that our dough is risen in two days.
I mean, two days.
In two hours.
Where in Europe, they still do a slow rise for their yeast.
which then breaks down phytonutrient or phytic acid.
It breaks down some of the gluten if there's gluten in there.
It just predigests a lot of starches.
It does a lot of good that will help your body handle it better.
Sourdough.
So it's similar to sourdough over in

I always say, let's just cook food how we did in the 1800s.
Like they made amazing bread that was nourishing for them.
The homemade is better.
The better choice is what I try to teach people.
It might not be the perfect choice because you're using a white grain, but you could make it an even better choice by using a different grain, using the kamut or using spelt or something.
Yeah.
There is, which is crazy because when I started this like 15 years ago, people, one, thought I was crazy, but two, you had to go to like Whole Foods or something like that, where now you can go Kroger, Costco, Walmart.
