So he uses blackcurrant cordial, a little touch of sugar and cinnamon works really well with berries.

And this will keep in your fridge for about a week or two.

Lovely with it.

So you make up your syrup.

The recipes are all online.

Throw in your lovely berries and then you pour it over your berries.

So you do and let that infuse.

This is delicious with pancakes, so it is.

And even pavlova.

And your lovely idea is some cream.

What I've done, I've made a little trifle.

So I've used those poached berries, get some lovely Irish made custard, which is fine.

You can make your own.

Life is too short sometimes, but you can get good quality to make a lovely Irish custard.

And what we've done is a layer of those lovely fruit compote, a little bit of a shortbread, or you can use sponge, custard, a little bit of whipped cream, and you're going to have the most delicious trifle.

If you assemble it the last minute, that's a really good point.

So you can have your fruit compote in the fridge, put that at the bottom of the dish.

Then if you wanted to, you could put your custard on top and just before you serve it, crumble over your lovely sponge or your shortbread I'm using for a little bit of texture.
