And what I've done is just whipped up some lovely cream cheese, a little touch of cream, vanilla into that and some lemon curd and then pour that over the fruit compote with that lovely shortbread again.

So that's the hard part done, to be honest with you.
And you're assembling at the last minute.
You just use a little hand mixer.
My always tip, if you're using just a little balloon whisk, you're burning off more calories so you can eat more of the cheesecake so you can...
