This was a very well-conducted study.
It was done in what we call a metabolic ward setting.
So basically Kevin had these participants in his metabolic unit.
They lived there for two weeks.
And they were given as much food as they wanted on each of the diets, so that they were in that kind of what we call free living setting where they could eat until they were full.
I think what was also interesting, as well as this big difference that they saw every day of five hundred calories, what they saw in as little as two weeks was actually a difference in weight loss as well and weight gain.
So people who were following the ultra processed food diet gained nearly a kilogram in just two weeks.
Yes.
And on the minimally processed diet, they actually lost
Nearly a kilogram of weight.
So there was like this two kilogram weight difference between those two.
And I think as well what I found really interesting as a nutrition scientist
is they started to also be able to tease apart some of the mechanisms that were going on.
You know, when we think about ultra processed foods, we typically thought about oh, the additives, the emulsifiers, that's causing some sort of issues.
But they looked at factors like eating risk.
And what they found in this study is people were consuming calories 50% more quickly on the ultra processed food diet compared to the minimally processed.
So they're eating their food really, really fast.
And that's likely because the structure of the food is broken down during processing, the texture of the food is very different.
So we know that people in our Zoe cohort who consume food more quickly on average consume 120 more calories a day.
We know that if you slow down the rate that you eat your food, that you will consume less calories.
