So this processed food diet that Kevin Hall was feeding.
had a kind of texture, for example, that meant people were eating their foods very quickly.
And that's likely one of the mechanisms why we're seeing this five hundred calorie difference.
And I think that's what's really fascinating.
It's the first study as well, starting to move beyond again this reductionist view of food processing, that it's about the additives.

There is some causal thing.

It's not just an association.
There's something happening independent to the nutrients.
There's something happening to the speed, the way we eat our food.
But that only tells us again one piece of a very, very complex puzzle.
So much changes when we process foods, not just the nutrients, not just the chemicals.
But so many other things.
And so yes, that's interesting, but obviously as scientists we need to go further.
I actually had a conversation with one of the study authors and they said that the most challenging thing, which we know whenever we're doing studies, is recruiting our participants, but they found it even more challenging for this study because they needed people that weren't previously exposed or consuming many sweeteners.
And so there were lots of people that said, Oh yeah, I don't consume sweeteners.
But actually, when they went and did a diet history check, they realized that these people were consuming sweeteners.
