So these really careful studies have separated out these mechanisms and given us a real pathway about why these foods might be bad for us, as well as how bad they are for us.
And
It was also designed by epidemiologists so that it could be used across the world, across very different food systems, to give you results that could be useful when you combine them.
So it's very much at the population level rather than at the individual level.
And I think that's really important for people to realize.
And that's even I think by some surveys greater in the UK than the US.

There's numerous studies uh showing this is the case, at least twenty
population studies around the world.
They all show in observational epidemiology a clear association between eating of these foods and coexistent chronic diseases.
So you name it, it's associated with everything from mental health to cancer, heart disease, diabetes.
You get increased rates the more UPFs are in your diet.
And
Some studies have uh adjusted for
uh things like saturated fat and uh sugars that we know are bad for you and they still see an effect of what we assume is what's rest, i.e.
the processing and the way those foods are made.
One just has the s the ingredients you'd find in your kitchen, the other one has all the tricks of a food company with the preservatives, the additives, the sweeteners, the colorants, uh, et cetera.
And that was the basic difference, but they were made sure that the amounts of the macronutrients, the the fats, the calories, etc.
were identical.
