I think it makes sense.

The climate in much of Southeast Asia is quite hot and summery.

And so I think the cuisine of those various countries and places really lend themselves to summer cooking.

And that's when I'm craving it.

I'm craving Vietnamese food and Thai food.

And actually, Portland has a really amazing Thai food scene in particular.

particular so I've learned a lot more about the cuisine while living here.

And

I want to start this menu with a really fruity salad.

It's a cross between Vietnamese and Thai.

It's from Andrea Nguyen.

It's a Thai melon salad.

I love a sweet and savory fruity salad in the summer.

It's refreshing.

It's hydrating.

So this one you make kind of similar to your dressing, although there's no nuts involved.

You make a really traditional Vietnamese vinaigrette with fish sauce and in this case she has a lot of grated lime as well.

And so you have your very savory umami fish sauce vinaigrette.

All the slime cest.

And then the salad itself is with watermelon, cantaloupe, roasted peanuts that you chop, a little bit of sugar to sweeten it.
