If I have a choice between baking with cherries or doing something fresh with cherries or simmered with cherries, I usually lean towards the fresher end of things.
And I just love cherries Jubilee because I think it's a way to accentuate the best of cherries.
It does involve simmering them on a stovetop.
So you're not getting just like 100% fresh cherries, but this is perfect for cherries that
are kind of on their way out.
Or like I said, if you bought too many of them, but also this works with frozen cherries, which for some people it's hard to get sour cherries or fresh cherries where they are.
And so frozen cherries sometimes are the best option.
Yeah, I I know it's so and here they grow really easily.
So it's a little bit easier to get them, but their season is super short.
This recipe that I'm gonna share from Series Eats gives you the option, and I love this, of using fresh sweet cherries, frozen sweet cherries.
Frozen sour cherries, jarred sour cherries.
So you have so many ways to make cherries jubilee.
You get a pan going, you add sugar, orange juice, and vanilla.
In this case, you're using vanilla bean.
And I love that because it's also taking a special ingredient, combining it with a special ingredient.
You're not gonna have to do much to make this taste good, but if you use just a few really
nice ingredients, you're gonna have an incredible dessert.
So you simmer that till the sugar gets dissolved, then you add your cherries with your orange zest, a pinch of salt, and you're basically cooking them pretty quickly, like four or five minutes.
And you do that covered.
So you cover them, you let them get all softened.
