Like you definitely wouldn't be into, even though risotto is quite warming, you wouldn't be into eating that in January, you know.

So it is, it's just, it's nature.

We don't realise subconsciously telling us what we want to be eating.

So yeah, that green, vibrant colour.

But beetroot as well would be gorgeous.

Nice bright pink one with maybe a bit of goat's cheese and toasted walnuts on top.

Yeah, like it has seasonality as well.

You know, like you can't get lobster.

Let's say, for example, we had the King Citric, Joey Harding up on stage talking about the seafood that they sell.

You can't get lobster until May, you know.

So really there are certain fish that you should be eating more of in the summertime or less of in the winter or whatever else.

So I always put hake, but hake is particularly gorgeous at the moment.

I always put hake in my fish pies or sandwiches

seafood chowders and stuff because I love it.

It's never farmed.

It's a wild Irish fish.

And this quick recipe kind of came because I knew I was doing the demo there.

I knew they had limited equipment and time.

And then I was like, actually, this is genius.
